Bad writing there. Snoke needed some kind of background. One of the worst things to ever happen to SW lore. Just like how you can apparently quit the jedi order with no consequences and run around the galaxy with force powers ala count dooku.
But as a result it's easy to project Snoke into being a Frankfurt school professor who is tryiing to use a hippie to increase his own political power.

Kylo doesn't want to destroy everything. He wants to recreate galactic order in his own image. Snoke wants that as well. Kylo describes that in terms of wanted to break "traditional power structures"

Why did they even need the snow troopers when the planet surface was a salt flat?

It's cheper, harder to stop, hits like the first of an angry god, and you have more control of the destructive force.
Otherwise you could run into a small space rock in hyperspace and instantly atomize
The problem with the original trilogy: the rolling reading intro takes away all elements of initial story building.
