My first attempt at battered French fries. If you're familiar with Rallys or Checkers these taste like theirs 100%. So Damn good. I didn't have enough oil so the batter consistency on the fries wasn't that great but Damn. I'm making them tonight too. So crunchy and delicious!! I wanna put them directly on a chili cheeseburger

It probably greatly depends on what recipe you're using. I think enriched dough takes longer, also by giving it more time, you will usually have more gluten development.
I only do it that long to ferment it

@xWarzardx nice thermometer dude. I just have a thermpro my ex got me last year off Amazon. I have 2 charcoal smokers I use it with them most of the time. cooking inside I rarely tempcheck
I want to learn charcoal in the future
I'll be satisfied with propane in the meantime

See I started differently lol I went straight to charcoal like a dummy. I started learning in the winter time too LOL. I started off with a cheapo Walmart brand vertical then bought a Smokin Outlaw horizontal with a firebox. I insulated leakage points and also used high temp gasket sealer, and I also put ceramic bricks in the bottom for heat retention. Lastly I put a 3 inch aluminum duct running inside to the stack. It's pretty sweet. Took a lot of trial and error and a lot of having to finish it off in the oven lol. I want to buy an electric someday and probably one that uses pellets. Smoking with charcoal takes so much time and needs a lot of your attention
