Low carb fries,
12g carbs in 1/4 cup flour, but 11g are dietary fiber, so 1 net carb per serving
Ready a pan with oil in it heating to about 325 degrees fahrenheit (or higher, most cook tops have not-so-handy info like low or high, in this case put it on high)
1 cup sweet lupin flour
1 tbsp Xanthan Gum
1/2 tsp salt
4 oz hot water
Add dry ingredients to a food processor and mix with a dough attachment. Add all but about a tablespoon of hot water, mix for a few seconds, then add the rest of the water. Mix until it becomes a dough ball. Knead for one minute, roll it out on parchment paper and cut into fry shapes. Spread them out in the oil in the pan and fry for a couple minutes. Different sizes will take more or less time to cook. Remove from oil and but on a paper towel/ plate. Hit with a little salt right away.
You can pan fry, or fry in a basket, or bake in a 400 degree farenheit oven for 15-20 minutes. Just watch them to make sure they don't burn.
Good alternative for diabetics because the carbs are over 90% dietary fiber, which helps control blood sugar.
