I'm going to be cooking prawns for lunch today and the next one, I'll be making a stock out of their heads so what's the prawn stock good for?

Mint, rosemary, peppers
Research which plants will grow in your climate. Also, how much sun they need. Mint, for example, wants less sun than other herbs. So if your window gets full sun, mint may not be a great choice.
Growing what you most often use would be my suggestion. I use lots of basil, parsley, mint and rosemary in my cooking, so that's what I grow the most of. They have different needs though, so they aren't all in the same spot. Basil and parsley are a great starting point, as they're super easy to grow.
