Then simmer covered for like 20 min

Yeah, no. The correct way is more to bring it to a boil while the rice is put in the water while it's still cold.
After it's brought to a boil, put to simmer at the lowest temperature

I always make it like
-rinse rice
-put in pot with cold water
-bring to boil for a few mins
-simmer for 15 minutes
-let rest covered for 15 minutes

I just eat the raw rice with a spoon
