Frozen stuff is a way of life.
You can tell me frozen steaks suck...but if it’s packaged right you will be fine for up to a year.
I butcher my own wild game.
But my Uncle and I split a 1/2 a cow and 1/2 a pig every year.
We have connections in other states from guys that come up here and hunt and fish.

Yeah I use pork fat in a 20% ratio to game meat unless I am making sausage and then it depends on what kind of game. For Duck sausage maybe 15% for Reindeer maybe 25% it all depends.

My Uncle caught a Northern Pike and we are cooking it up today.
Fresh fish is hard to keep together on a grill unless it is cut into steaks or the skin is still on one side.
So I will Blacken this which is a Cajun style of pan searing in a cast iron skillet.

You flip it one time and one time only to keep the seasoning on as a tasty crust.

This is enough to feed 4.

Served with Fried Rice and Dilly Bread. And yes that is an orange, also use lime if you want to give it an extra Zip.

BAKE YOUR BACON
It’s about 30 minutes at 350 depending on how crispy you like it.

Doing a whole package at a time, it’s so much easier and less mess then frying it...just try not to eat the whole package you can refrigerate it afterwards.

Yes it comes out excellent @Wardog you just need to keep an eye on it the first time and remember how long you cooked it for and remove it from the cookie sheet so that it doesn’t continue to cook once it’s out of the oven and becomes over done because it will continue to cook in its own grease. I like done but chewy bacon... not crispy bacon personally.

It also makes it easier to save the bacon grease afterwards which I use on fresh game.

A midnight snack 😋
