And the Thigh I cut it from... it’s cooked all the way through as you can see... if you see ANY Red then it is NOT cooked so Do NOT eat it at this point.. but the solution is simple just throw it back on the grill for a few minutes until all the Red is gone .. 3-5 minutes should do it...
Here is the Lemon Pepper chicken.. I showed one side up and one side down for each piece that way you can see they are done

This is NOT as easy as it may appear to make... I didn’t get it right the first time... and the instructions were Wrong.. The way “They said” it would be done was like in 45 minutes to an hour... I have NEVER had it DONE in less than 1 1/2 hours these took 2 full hours and you have to watch them... this is NOT a set it and forget it recipe.
Cook Low.. and slow, and long and Strong for this to turn out right.... but it is well worth it in the end.. I showed how to cut the chicken but the meat came right off the bone... in fact another good TELL for the chicken being done is that you can pull the wings right off...
It’s a balance between cooking to slow and leaving it tuff and dry or juicy.. but under cooked...if you can learn to cook this right with timing and heat... then you can cook ANYTHING!!!

Here’s a dessert I created at work, It’s a Tuile with Vanilla Mousse, a Blood Orange and Kiwi Coulis, Candied Orange Peel, and then fresh Raspberries, Kiwi, and Blood Orange.
So it's a salad?
