Reciprocal zenith angle measurements, measured with theodolites AND GNSS will always show an angle total of MORE than 180 degrees, meaning the plumb line vertical is not parallel, and you can calculate the curvature that comports with expected curvature from there.

Zenith is vertical, these are plumb lines measured more accurately.
