Well first I wouldn't start with charging 10k calvery into their front line that you can't even see. I would have packed the castle with as many men I could, then any overfill I would have kept in reserve behind the castle, to force them at the walls. The Dathraki I would have had staged elsewhere to smash their side. Perhaps even used some of that time they had to build makeshift walls in the back or around the castle on the inside of the trench. Kinda a line one, then another trench between that and the main walls.
