Here comes something we can all agree on SAUSAGE
When it comes to sausage there are 2 schools of thought links or paddies.
I will be doing paddies today.
Maybe at some future date I will break out the intestines and sausage stuffer and show that.
After mixing the seasoning in FIRST to make sure that is even.
The next steps are very important.
You NEED to add Bread Crumbs and Bacon Grease.
This was about 2 1/2 lbs of ground Caribou so it is REALLY REALLY LEAN.
So I add 1 cup of bread crumbs.
In a pinch you can use crushed crackers too.
Also add 1/2 cup of bacon grease.
Mix WELL by hand or use one of these
Then I roll them into golf ball sized chunks
And cook them all on mass this batch produced 17 good sized paddies
As anyone familiar with fresh game Knows itβs very lean and needs to be cut with usually pork fat or bacon grease.. there are a few exceptions.
The purpose of the bread crumbs or crushed crackers is to hold the grease or fat in... if you donβt do this (at least from my experience) your sausage will be to dry.
I am pan frying these.
You can bake them in the oven to just like how I baked the Bacon.
I just prefer to brown the sausage on both sides.
And every batch of sausage is a little different especially when working with fresh game.
