As anyone familiar with fresh game Knows it’s very lean and needs to be cut with usually pork fat or bacon grease.. there are a few exceptions.
The purpose of the bread crumbs or crushed crackers is to hold the grease or fat in... if you don’t do this (at least from my experience) your sausage will be to dry.
I am pan frying these.
You can bake them in the oven to just like how I baked the Bacon.
I just prefer to brown the sausage on both sides.
And every batch of sausage is a little different especially when working with fresh game.

@Toilet Hugger @Chair My Grandmother came home to try it. She said she loved it. I might have to reconsider that my taste buds aren't that great
damaged them 2 years ago. I thought it lacked flavor. She says it had a lot. So woohoo!
