bad restaurants in general have, don't you have those Indian + Italian + Turkish restaurants nearby you offering pizza, kebab, indian stuff and all variations from one kitchen?

aka saucebase and some spices
large list is not always measure of bad restaurant.. but its good warning sign
and easiest to spot

I have had pretty much opposite experience but this might be because every cheap takeaway in my city is owned by Turks

I know a great story about a minister here that made an off hand remark about chinese restaurants on his first working day
- extremely light because of the materials used, but quality
- long ass blade in a not so big body
- VG-10 steel: lasts sharp very long, takes a little longer to resharpen but worth it
hot pot is not bad
