If they weren't in these fields the sun and the moon would be too high and would disprove the globe just based on the height they would be away
That and the fact that the sun would be lighting up most, if not all, of the earth
Plus doesn't this type of flat earth model simply dismiss the dome also due to the sun and moon not being in the field?

The Sun wouldn't light up all of flat earth. Light would have to travel infinitely far or nearly so, in order to do so.
