That sounds like it'd be a good way to go about it.

They have that stereotype of being freakishly muscular, so I imagine the meat would be more tough. Yet, at the same time there is also a lot of images of fatty looking kangaroos.

This image here of kangaroo meat makes it look fairly dark.

Here in america we care more alot about the aesthetics of meat

that's horse meat too

That one has a more tender look. Even more so is the amount of drool that my mouth is producing while imagining its taste.
