Now I'd rather eat horse meat instead of beef now it's probably not sold around here because it seems unlawful seeing as why anyone would eat a horse and I suppose people have an image to maintain but it it's nutritional properties really outweigh beef by a good margin, we have to many useless cows here in America with their only purpose is being our food

That sounds like it'd be a good way to go about it.
They have that stereotype of being freakishly muscular, so I imagine the meat would be more tough. Yet, at the same time there is also a lot of images of fatty looking kangaroos.
This image here of kangaroo meat makes it look fairly dark.
