Every couple of hours or so the second monitor will turn off for a second and shove any boxes I had on it to the first monitor.

Sounds like the graphics card can't handle it and keeps rebooting to 1 screen and then restart the 2nd

I had it before, fixed it somehow, and it started again.

Replaced the monitor with an old one and it fixed it for me

Mine are both pretty old. They don't even have HDMI ports. lul

My graphics card couldn't handle the new screen I had

I have a 1st Gen titan, from back when it was worth the price of it's quality compared to x80 series

So it can be incompatibility
