The war in Spain lasted several centuries and it was actually easier and cheaper to keep the occupied territories as tributary states paying gold to the Christians, until we could afford the Reconquista. In short, the Moors paid the Christians not to attack them, and the Christians eventually saved up enough tribute to attack them.

The Mongols didn't eliminate the Muslims anyway. Many of then actually were Muslim. Prior to that, they were allies of the Christians and many believed they were in fact the fulfillment of a prophecy that a far eastern Christian king would come to aid Europe. That would be Nestorian which many early Mongol rulers were.
