We have two propositions

Light travels straight => Round Earth
Light sags => Flat Earth

So now we have to prove that light sags and does not travel straight over a large distance

I think you can only know the truth if you have been both a globe earther and a flat earther, and you have genuinely believed in both.

This allows unbiased comparison

You can say
"The truth is simple. The earth is flat"
500 years ago.
Now people say
"The truth is simple. The earth is round"
But how can anyone be sure that in the future people will not universally say
"The earth is cubical."
If we are not certain that our current model will not change and cannot be improved by changing the shape, then we can conclude that we don't have the right shape.
