the city must be reaming the resturant or they might not be selling a lot of dishes (below 6 an hour)
(or whatever _you_ would call it when you are open at a time you don't expect much business, in order to give people more certainty that you'll be open when they actually want to come)
places that serve 32 dollar chicken dinners operate by reservation only

and the clientele either don't want to, or can not research, source, assemble, and cook a chicken dinner for their party

I suspect a lot of this comes down to people generally not bothering
and paying the price
which they are clearly willing to pay, since these places stay in business
when it comes to reservation-only restaurants, the customers are setting the price whether they like it or not.
