Well next time don't drink to empty stomach and if you want to slow down the absorption of alcohol eat something that has hard fats it will form a protective layer inside your stomach. Something like chips or roasted & salted nuts.

It takes time to start picking up the notes and stuff but I totally get it why you feel that way if you have only been drinking the cheapest stuff that has the most %. Like you would when you just want to get hammered.

I am allergic to Tannin and get the exact same response if I drink wines so it might not the the alcohol https://en.wikipedia.org/wiki/Tannin where as ethanol allergy typically shows it self as rash, nausea and in extreme cases anaphylactic shock you can test your theory by taking little bit of vinegar with water in a dose of about 50/50.
