the cream in the can is packaged with no2, the shaking helps to emulsify the gas in the cream and as it passes out of the pressurised container it rapidly expands, causing the cream to "whip"
just get an old whipped cream maker from a second hand store, and buy the bulbs in packets of 12 from the dodgiest corner store you can find
so if you didn't shake the can the no2 remained on top and you could just squeeze it out
