@Crow this is the recipe I used to use as a base, the dumplings are fab but I know they're not big in america so it won't hurt if you leave them out. feel free to use any kind of veg, you need to match types though. you'll need maybe 500g of starchy, so potato or sweet potato (potato works better with winter veg and sweet potato for other stuff) and don't worry too much about the other veg, just chuck it in till it looks like there's enough. I like carrot, parsnip, mushrooms, butternut squash. that kind of stuff. it's really really easy and makes incredible comfort food, the gravy is thick and ties it in well. make sure you season well, it needs a little salt, a lot of pepper and something green, dried parsley works well. if you mix in some smoked paprika to the frying veg it gives an amazing warmth to the whole thing, that's what I've done for a long time.
