That’s an optical illusion which arises from the Sun and the Moon being separated by a wide angle, which to an observer makes it appear that the Sun is illuminating the Moon from a high angle
If you were to graph this out as a 3D projection this effect would much more noticeable
Essentially our brains just can’t tell the difference because we don’t have a 3D viewpoint
