you will realize its absolutely not as simple as observing just collapsing the wavefunction

quantum eraser is where you observe the path in the double slit experiment, but you later on precisely destroy that information in a quantum way so it cannot leak back into the environment
if you do that, you recover the interference pattern as if you had never observed it

so, its not that observing causes collapse, its that if your current state has a memory of interacting with a quantum system, you cant interact with a superposition of it that would contradict that previous measurement
