Because "full quality" is extremely subjective when it comes to anime/cartoons
Some shows were only drawn in 720p or even lower, but some still insist on getting 1080p or 4k rips when there's no actual visual improvement to be had from doing it
not to mention the "muh flac" argument when it comes to audio
you might also not want 7.1 if you're never planning on getting an actual 7.1 setup or your space doesn't allow/fit one
