ESP32 is great with IO, esp8266 wasn't that good, so attaching an arduino was oftenly a valid option
the problem was the actual ESP8266 chip had plenty of IO ports
but most of the breakouts didnt provide them

like both of these use the same chip
i like the wemos d1 series

I've been using kicad and will probably end up with some $5 chinese board house because they can outperform anything i'll manage to pull off
etching seems doable but soldermask (and silkscreen but less essential) seem near impossible
Main disadvantage of a chineese board house is that you have to wait a month to get your boards. Also soldermask is doable with UV-resist.
waiting a month isn't really a problem
i saw some videos on people applying soldermask and it seems near impossible to get an even layer and spread it to all corners
