Get your chicken wings, stab them a dozen times with a skewer.
Put them in a snap lock bag with half a cup of fish sauce.
Let them marinade overnight.
The next day, dry them thoroughly.
Vacuum bag them.
Cook them in a sous vide at 60C for 6 hours.
When they're done, take them out, and dry them thoroughly.
Heat up a pot of high smoke point oil (rice bran, safflower, sunflower etc) to 230C.
THIS IS REALLY FUCKIN HOT.
Deep fry the wings in small batches until they're just golden. It wont take long.
Don't worry that its too quick. The sous vide at 60C for 6 hours killed all the bacteria you need to worry about.
