You're a courier and walking around with things is the basic premise.
And when I say walking simulator, I mean it. Having to put on your equipment and deliveries so you are balanced because if you got a lot of load on you, you get easily toppled over. Scaling the terrain is an important element too. But shit like ladders means you can carry less deliveries!
I played the first half of Black Mesa yesterday and it's mostly a walking simulator with some shooting of headcrabs
Apparently most Death Stranding shootangs can be evaded. Also, there's some resource management on top of that.

It seems to make traversing an open world more interesting than just pushing forward on a thumbstick or pressing w and pointing in a certain direction
Also part of maintaining balance is paying attention to what you're walking on because different terrain gives you better footing
