Yeah I wash chicken, just don’t make a mess- I wipe down my counters and sink when I’m done cooking anyway. Sometimes the meat smells fine but the juice smells gross so I always wash it

It’s beef Wellington it’s a filet mignon with a mushroom duxelles, wrapped in prosciutto and puff pastry, basically it’s a bunch of butter and expensive meat
It also has a grainy mustard and powder mustard rub around it with a heavy dose of thyme
It takes a couple hours to throw together, about 8 if you make your own puff pastry, but I’d say it is worth the try it you’ve never had it before. It’s expensive but worth the try if you’ve got an expensive pallet anyways.
Otherwise takes about 4-6 hours because you have to cool a few layers before throwing it together or there’s just so much hot fat it falls apart
