Night 3 of vegetarian food and I can't tell the difference
Vegetarian food is actually really good. I assumed it would be all vegetables but we've eaten tacos, chili, and nachos now and I honestly don't miss the meat

First make your rice well enough in advance that you can chill it in the refrigerator BEFORE you fry it, most try to fry their rice after it’s done without chilling it first, that will lead to over cooked rice and a mushy mess.

The shrimp I add sriracha sauce, vinegar and honey and just simmer until it all sticks to the shrimp then remove from heat.
This will give it a spicy, sweet and tangy zip.
That you will only taste on the shrimp.

Another important point here is the oil most people don’t use enough or the right kind.
I’m using 1/3 of a cup of Peanut Oil... this makes a huge difference in flavor.
Get it up to about 300 degrees and add the rice, stirring constantly.

This should take 10-12 minutes and the rice should be a transparent golden brown at this point and the pan still making a sizzling sound as you stir. TURN OFF THE HEAT.

The common mistakes people make is
1. not chilling the rice before frying.
2. trying to cook the other ingredients in the rice they should be cooked separately and added later.
3. not enough oil and not having the oil up to temperature when they fry the once again cooled rice.
(and I highly recommend peanut oil)
