I grill the steaks on top of the apple slices.... I actually developed this technique for BBQ chicken.. more on this later.

Now this is what is left of the Apple slices.. they arenβt good for anything at this point... so I throw them out but thought I would show them grill side down and steak side up .. respectively.
I think that would be next level for pork, itβs a good idea

Yes great on pork chops as well it keeps it away from direct heat and steam cooks the juice from the apple slices into the meat.
Now I used it on steak this time because of the Bourbon & Brown Sugar seasoning it matched with the Apple... if I were to be using say a Montreal Steak seasoning.. I would cook on Onion Slices..

I don't know a good lamb recipe yet
Lamb isnβt readily available to me up here so I donβt make it very often like once or twice a year... but I do a lot of wild game such as Caribou and Reindeer... and other stuff as it comes my way...Salmon in the fall for sure.
Have you ever had Shepherds Pie? Itβs a Lamb Recipe that is quite good.

COD is too but I usually beer batter cod... halibut also which I bake.
Pollock is great
I have a verity of Fish to choose from.. itβs seasonal but I freeze plenty.
Grayling and Perch too.
Varietyβs of Crab are seasonal up here too... I stock up when itβs cheap...
This is what one of my freezers looks like with plenty of game cuts... all stocked up for winter time.
There is a second and I have a 3rd one in the garage I keep sea food in one, domestic like Beef , Chicken and Pork in the other and the last one is for wild game.
