@patriotfoxxo That looks real good been a while since I had myself a good mess of squirrels they have been a little light round here this year normally we save ours up and have a big squirrel feast round new year’s but we didn’t have enough squirrels this year

Normally my neighbors corn fields are loaded down with squirrels but I reckon they got wise to me I don’t use a dog I try and out think the squirrel myself and this year the walnut trees were pretty dry
Live on a farm and I will help my neighbor out in his field for permission to hunt his land It’s a fair deal

I take it that you mostly harvest the legs
I sometimes do the whole squirrel over a flame or pan fried
I tried over a flame once I couldn’t get it right

11 pound pork shoulder. Smoked with charcoal, hickory and mesquite wood. Had to finish off in the oven because it was 15 degrees outside yesterday. But it looked nice on the rack lol. I made a sauce with the smoked jalapenos made it sweet too with some liquid sucralose in there. Pretty good.

It came out medium well. I didn’t feel like starting the charcoal grill so I just seared it in a non stick pan. Wasn’t hot enough so it was in the pan for longer which cooked it more
