only run linoox on my thinkpad to stream anime in bed 😊
And it's a media server with my plex library as well as Occasionally hosting game servers on it
haven't found the need for running a server especially for plex etc

What makes Emby better than plex
For my setup. It visually looks better. And is much easier to setup for my family. The UI on Roku works flawlessly
And it takes seconds to setup a new user so they can join for free
all I can remember from Plex is that their UI looks like absolute dogshit
especially on my LG webOS tv
