Ok, for one, pilots don't use gyroscopes to determine rotation, they use it to maintain level and altitude.
Secondly, what you are referring to is called a **Ring Laser Gyroscope**
Which also does not determine rotation. @bigolste

i've always wondered though, will i come head side up or foot side up after i've journeyed throught the center of the globe

No you take 2 gyro’s or more and compare them to eachother
