very simple, direct measurements tell us there is is no curvature over great distances
8 inches per mile squared drop off from the supposed curve has never been observed in reality
no curve means we don't love on a globe

the earth is not a globe because with the help of powerful optics we can see landmarks hundreds of miles away which should be hidden by up to miles of supposed curvature - but they aren't

Light doesn't travel infinitely far. That, on top of limited human sight, angular resolution, refraction, dust, any number of weather conditions obstructing your view.
That's why you can't see end to end.
