what incentive would they have if nobody takes that job
If NOTHING ELSE there are people who are stupid (or mentally ill), or immigrants without language skills and serious insecurities, or etc, that can be taken advantage of
so for example if they decide to pay you $2 dollars an hour and it costs you more to live then that
who would be taking that job?

you have a labour issue
the balance should be struck where there is nobody willing to work for $2
People get screwed by their employers all the time. I had an ex who worked as a waitress and her "minimum wage" was even lower (wtf?) - and her boss took her tips
Without government regulation, this stuff happens time and time again
Minimum wage is just ONE check-and-balance to keep things from being too fucked up
Why didn't she quit, right?
She was a middle-class white American girl
Why not just find another job?
Maybe she was just stupid!
But she worked there for almost a year. Even when living with her parents and being able to find somewhere else.

The problem comes when minimum wage tries to be a living wage
Like, a simple wrench to throw in those gears is how people need money NOW to pay for stuff. And they desire stability and stuff from their job. They get hired at a suboptimal rate, they are very likely to stay there, even if it's shitty
