The "real" answer to that is a bit boring, cats are great for keeping down pests like rats and (in Egypt) snakes. This leads to people valuing cats and eventually (pseudo-)worshiping cats. Then you get a feedback loop, and make a cat god of protection, and all cats are symbols of that god, so you keep them around because they're holy...
You get the same thing with Jews and Muslims who can't eat pork or shellfish. Poorly prepared pork can carry a lot of disease that crosses over easily, shellfish spoils easily and gives really bad food poisoning, so you don't eat either if you can avoid it... And eventually it becomes a Sin to eat such things
