Eastern Christians associate unleavened bread with the Old Testament and allow only for bread with yeast, as a symbol of the New Covenant in Christ's blood. That's the answer of Eastern Church

Look, I agree with almost every tenant of Orthodoxy and it's easier to accept than Catholicism, except for maybe infant communion and leavened bread.

But leavened bread is a huge deal.

Eastern Catholic uses the same bread as Orthodox

So both are valid
