How are we kept on the ground if it’s not a sphere enacting gravity to hold us down?

If the earth is flat, why is it when you track aircraft flying routes it creates curvature in their trajectory?

Aircraft can only function in our atmosphere, if it flies higher than its allotted altitude the engines cannot produce thrust from the oxygen it intakes, so it will eventually fall. General aircraft can’t fly to outer space even if it tried @Logrian
