They're already moving away from that, e.g. the latest all-in-one Apple computer monitors have just WiFi; you can still use USB ethernet adapters, but most probably don't know about that and is inconvenient and takes up ports unless you get a hub

cat 5e has split insulated lines...but only limited insulation, power and data isolated only

cat 6 is like same as cat 5e but with insulated data

cat 7 is same as cat 5e and cat 6, but with full insulation between data lines and between power lines and insulated and grounded shielding over all of it

basically means each line thru the cat 7 has shielding from every other line in the cable
