so question: i've been buying bison and elk steaks and everytime i cook them, they're getting tough and dry
is it because i'm cooking them like they're beef steaks?
i have medium rare on cuts of beef down, but when i apply the same time and temp to bison and elk, the results aren't the same and it vexes me

that's the complete opposite on how i was taught to cook beef steaks
