The machine-learning stuff that AI is powered by is hosted on giant servers who-knows-where and wouldn't be unique to your bot.
Computers aren't unique
A lot of people work on their laptops while being offline, the demand for a consistent internet connection is not as high as you seem to think, even though it would make a lot of things more convenient
They would have to be extremely expensive to be offline-capable, and the more competitively-priced ones would just run off a proprietary chatbot that runs on another server and cut CPU costs for individual units.
It also is basic practice for troubleshooting as well. You won't need to diagnose every single sex bot if it gives you the wrong answers.
Alright, since we're not making progress, why is this point so important?
Technology does not practically advance in a linear fashion, it contorts and contracts and curls up around itself in regards to practicality. It's why we don't have flying cars.
The point is it would most definitely spy on you and spit out ads for things in casual conversation, as a development of targeted advertisement. They'd fund the operation and backend the same way digital media always has: selling adspace on your sexbot's brain. It would literally shill at you and recommend products in its off-time.
There would be demand for no ads, even if that ends up being more expensive, for whichever reason
So it doesn't matter, everyone gets what they want

Women can divorce rape men, and do so very often. They can cheat on men, and do so very often. A large minority of men are not raising their own biological children. And nagging will never become a feature for sex robots either.
