I have peppers still drying
This time I made it with
1 pot boiling water
~5-6 oz of dried ancho peppers (stems cut off, but seeds stay in)
2 cups apple cider vinegar (doesnt have to be the unfiltered good stuff)
1 head garlic
1) Destem peppers, remove garlic skin while bringing water to boil
2) put peppers in a container, pour boiling water over. Make sure peppers stay underwater for 30 mins
3) Drain peppers and keep 1 cup of the water for later use, crush peppers and put into empty container
4) add drained peppers to the garlic cloves, pour 2 cups of vinegar and let sit for another 30 mins, make sure to keep everything under (you can add more vinegar if its a little to shallow
5) after 30 mins, put the mixture with that cup of reserved ancho water into a blender or processor and liquify (I did it in a blender for 2 mins on liquify)
6) run a spoon thru the finished product to make sure everything is liquid, bottle and you are done
