cream cheese is pretty easy surprisingly, all you need is buttermilk and half-n-half, you put enough buttermilk to culture the half n half, leave it out at room temperature for 12 hours until it sets then you let the whey drain out by hanging it in some cheese cloth

the whey took like 12 hours to drain too but it made about a cup n a half of cream cheese which will probably last a week or more. I tried made the bagels the other day just to use it up tbh

it would go really good in a cinnamon bun recipe or something though, anything that needs cream cheese
