The noodles were a bitch too make tbh, but I just had to use the right type of flower

The sauce was easier, I got lazy and used a can of tomatoes, but the herbs were from a friend's garden

the meatballs were 70% beef and 30% pork, I grinded up my own beef chuck and pork shoulder, added a few spices and panko breadcrumbs

The flavors and fatty acids from the combination of beef and pork were squeeze dried through a cheese cloth so it wouldn't be too oily

after that, I seared the meatballs on all sides for a crispy crust, and then I tossed them into the smoker for 28 hours on low heat

I used a combination of pecan and cherry wood

Sounds delicious, I could go for some lunch right about now
