@Seabass the tracking is pretty easy when you find the menu for it. The quests themselves are pretty shitty though

The storyline quests will send you on specific missions to specific areas on the destination map.

The side quests require you to do numerous things for a particular vendor in the open world.

The bounties are more or less the same, but are far quicker and offer far less rewards.

All three types of quest can be “tracked,” as in you can see the progress you’ve made on the right side of your screen when you pull up your ghost, but only three quests can be tracked at any one time.

To see an overview of your quests, to pick which ones to track, and cash in any complete bounties, there should be a tab in the same menu as the map. Open the map and press A a few times until you see a list of quests and bounties.

It’s almost derivative of what late-game D1 had

Actually no, it’s practically a carbon copy, the only difference being that you can see far more quests on the screen at the same time.
