I personally don't understand the dangers of unions in a control economy, unions just allowed Democratic representation of workers but are not really needed if workers democratically decide how the business is run without other owners

The workers will over time try to become the strongest union

And try to use political means to get power

It would just become mini states

If the state is dictating what is produced, and the workers dictate how it's produced because they democratically control production what is the problem?

Unions are mainly used to mediate between the owners and the workers when you have production controlled by workers democratically you don't need unions
