Can even make it out of stone blocks if you want, but use modern engineering practices to make it far sturdier than the old ones.
Plus insulation, piping, utilities, all that good shit
Then again if you're making a castle go ahead and get a well dug out
And a grain silo erected.
Fuck could even use cryogenic containers for your modern food stockpiles.
You'd out siege anyone too if you get a Federal Firearms License and mount machine guns and mortar emplacements.
And with modern luxuries your dungeon becomes far more effective at torturing prisoners. Toxic gas containers on site allow you to inflict various illnesses, and built in high voltage transformers allow electrocution.
Not to mention remotely activated blast doors can prevent almost any escape attempt.
I kinda want to build a modern castle now.

Secret tunnels that are lined with lead along with many decoy tunnels so that ground penentrating radar will be unable to determine escape routes.
And emergency EMP generators in case of assault by robots

Nobody is gonna be brave enough to issue building code citations if they cannot make it to the front gatehouse
You could have a helicopter pad with refueling station, that can be covered in the event of a siege. There are types of gases you can release and blow over the top that will make infiltration impossible without self contained breathing apparatuses. But those have limited capacity. Make the outermost defensive measures go through several layers of inert atmosphere so that it would take too long to use portable oxygen. Meaning they have to use air supply lines. Meaning you can target those. Backup escape oxygen cylinders only have 5 minutes worth of oxygen inside them.
