A lot of expansion is going to cause a lot of tissue destruction. Good for putting the deer down but you ruin the meat

with head shots, you often miss the target as deer are usually bobbing up and down while eating, or looking around for danger. the body stays relatively still

Plus it's a psysically smaller target even if it was stationary
