Scramble 2 eggs and start the Rice

After the rice is done I refrigerate it and cut up shrimp and veggies and sauté them.
Refrigerating the Rice will keep it from over cooking when you go to fry it.
I use Peanut Oil to fry it in to give it Restaurant quality taste.

I'm actually proud of this dish. I feel like I improved a lot as hobby chef. I still remember my first duck.. It was meh and it was just a random duck. This is a fancier barbary duck. It's bigger and fatter and easier to mess up but the meat was nice and pink with a good crust

I am very familiar with purple potatoes and actually grow them up here.

Some say that these potatoes were engineered to grow in colder climates... but can’t confirm this.
The deeper the color of the potatoes the more vitamins which is mostly in the skin of the potatoes.
It’s an interesting study.... or you can just eat the potatoes.
And they make very cool alien looking like mashed potatoes

Haha yeah I was thinking about turning them into mash potatoes next time. Since they are pretty starchy they should be perfect for it. And purple mashed potatoes has to look cool

Also, my recipe for the cookies are: to make 1 layer of the cookie sandwich
3/4 cup Softened butter
1/3 cup Granular Sweetener - I use Lakanto Monkfruit, but whatever works for you
1/2 cup sukrin gold brown sugar - again sub any brown sugar you want
2 Eggs
2 tsp Vanilla Extract
2-1/2 cups almond flour
1/2 cup oat fiber
1/2 tsp Baking soda
1/2 tsp salt
1- 9 Ounce Bag Sugar free Chocolate Chips - I use Lilly's Semi Sweet, but I've used others like Lakanto semi sweet and that worked fine
Bake at 350 fahrenheit until it looks good and can pull a toothpick out without getting dough on it. Took me about 20 minutes.

The "frosting" is just
1 cup of heavy whipping cream
1 tsp Vanilla Extract
2 tbsp contectioners sweetener - I use Lakanto again, but use what works for you.
Just combine and wisk for a few minutes, either by hand or by a hand mixer.

We had a birthday today, and my new 5 year old wanted pizza and cookies. Daddy delivered big time. 1 regular yeasted flour pizza, one keto pizza, and a 2 layer keto cookie dessert with white cream frosting in between. We have 5 kids, so we had to make a bunch of food.

I got out having a couple slices of the keto pizza and a cookie sandwich for less than 20 carbs. Pretty happy about that! Not pictured are the steamed carrots and baked yams. Because those are just not pretty enough

Also suggestion when making pizza, something I always do, is lightly add garlic powder all over the pizza.

Garlic Powder is used in most restaurants and sometimes cruddy fast food.

Its one of the main sources of flavor.

Unless you don't like Garlic or already have done that, you could just ignore this

@Quill i will definitely try that! I have stripped down the recipe on the keto pizza to its most basic parts. The dough is only almond flour, mozzarella cheese, and cream cheese. I have not yet added in any spices back yet.

Oh coolio, yeah Garlic Powder is a commonly used spice in Pizza apparently. I was gonna use it without knowing that, and when I found about it, I thought that makes sense.

You could also use Italian Seasonings, or Freshly Crushed Rosemary or Onion Powder as well
